Olive Oil Quality Assurance in Turkey
Turkey is one of the world's larger olive oil producers, with distinct regional oils from the Aegean, Marmara and the Southeast. Grade verification, authenticity and contaminant control are the core of any olive oil quality programme.
- Season
- October to February
- Main regions
- Marmara, Aegean, Southeastern Anatolia, Mediterranean
- Category
- Edible Oils
- Key tests
- Full grade analysis by IOC or EU methods; Sensory panel test by a recognised panel
01Product overview
- Main varieties include Ayvalık (Edremit), Memecik, Gemlik, Domat, Nizip Yağlık, Kilis Yağlık and Halhalı
- Grades: extra virgin, virgin, refined, olive oil composed of refined and virgin, and olive pomace oils
- Early harvest oils are greener and more bitter; later harvest oils are milder
02Turkish production regions
North Aegean (Balıkesir: Ayvalık, Edremit), South Aegean (Aydın, İzmir, Muğla), Marmara (Bursa, Çanakkale) and the Southeast and Mediterranean (Gaziantep, Kilis, Hatay, Mersin).

04Export characteristics
Exported in bulk by flexitank and ISO tank and in packed form. Turkey has applied temporary export measures on bulk olive oil in some seasons, so the current position should be checked.
05Typical quality parameters
| Parameter | What is checked |
|---|---|
| Free acidity | As percent oleic acid |
| Peroxide value | meq O2/kg |
| UV absorbance | K232, K268 and Delta K |
| Fatty acid composition | Authenticity check against seed oils |
| Purity criteria | Sterols, waxes, stigmastadienes, ECN42 |
| Ethyl esters | For extra virgin grade |
| Sensory | Panel test: median of defect and median of fruity |
Limits and tolerances come from your contract and the applicable standard. We do not apply generic values where a contract specification exists.
06Visual inspection criteria
- Tank or flexitank cleanliness and previous cargo
- Sediment and haze
- Packed goods: fill level, leaks, closure, labelling
07Sampling methods
Bulk oil is sampled from tanks, flexitanks or ISO tanks at defined levels or as a running sample during loading, in line with FOSFA rules or the contract. Packed oil is sampled by carton using ISO 2859-1. Samples are taken in clean, sealed, light-protected containers.
08Laboratory testing
- Full grade analysis by IOC or EU methods
- Sensory panel test by a recognised panel
- Pesticide residues
- Plasticisers (phthalates)
- Mineral oil hydrocarbons (MOSH/MOAH)
- Halogenated solvents
- Free fatty acids and peroxide value
- Fatty acid composition
- Contaminants such as 3-MCPD, glycidyl esters and mineral oil hydrocarbons
Testing is coordinated through laboratories accredited to ISO/IEC 17025 for the required method. See laboratory coordination.
09Food safety and quality risks
- Grade misdescription and blending with lower grades or seed oils
- Oxidation in poor storage or transport
- Contamination from flexitanks or previous cargo
- Plasticiser migration from hoses and containers
10Packaging and labelling
Glass, PET and tin from 250 ml to 5 litre; bulk in flexitanks, ISO tanks and IBCs.
11Storage and transportation
Cool, dark storage in stainless steel tanks, ideally under inert gas. Light, heat and oxygen degrade quality.
12Pre-shipment inspection procedure
- Agree grade, analytical parameters and sampling method
- Inspect storage tanks, flexitanks or ISO tanks for cleanliness and previous cargo
- Draw and seal samples from tanks or the loading line
- Check packed goods for leaks, fill level and labelling
- Send samples for grade and contaminant analysis
- Supervise filling, sealing and loading
- Issue inspection report with seal numbers and laboratory results
13Relevant international standards
Regulations are amended regularly. Always check the version in force for your destination market.
