Wheat Quality Inspection in Turkey

Turkey is a large wheat producer and one of the world's biggest wheat importers, because its flour and pasta industries export so much. For buyers, wheat inspection in Turkey is mostly about verifying contract quality, mycotoxins and documentation on grain moving through Turkish storage and ports.

01Product overview

  • Bread wheat (Triticum aestivum) and durum wheat (Triticum durum)
  • Durum is concentrated in the Southeast and Central Anatolia
  • Sunn pest (süne) damage is a known local quality factor affecting baking performance

02Turkish production regions

Central Anatolia (Konya, Ankara, Eskişehir, Yozgat), the Southeast (Şanlıurfa, Diyarbakır) and Thrace (Tekirdağ, Edirne).

04Export characteristics

Turkish grain exports are dominated by processed products such as flour and pasta, often made from imported wheat under the inward processing regime. Raw wheat export can be subject to government measures.

05Typical quality parameters

Quality parameters for Wheat
ParameterWhat is checked
Test weightHectolitre weight in kg/hl
MoistureMaximum per contract
ProteinPercentage on a stated basis (dry matter or as is)
Falling numberIndicates sprout damage
GlutenWet gluten and gluten index
Damaged kernelsSunn pest damaged, broken, shrunken, heat damaged
VitreousnessFor durum wheat

Limits and tolerances come from your contract and the applicable standard. We do not apply generic values where a contract specification exists.

06Visual inspection criteria

  • Sunn pest damaged kernels
  • Live insects
  • Musty or sour odour
  • Foreign seeds, stones and other grains

07Sampling methods

Sampling follows GAFTA sampling rules, ISO 24333 or the method agreed in the contract. For bagged cargo, bags are sampled with a sampling spear across the lot; for bulk, samples are drawn from the moving stream during loading or from the stack. Samples are sealed in sets for buyer, seller and arbitration where required.

08Laboratory testing

  • Protein, moisture, test weight
  • Falling number and gluten
  • Deoxynivalenol (DON), zearalenone and ochratoxin A
  • Pesticide residues and heavy metals
  • Alveograph or farinograph where specified
  • Moisture and test weight
  • Protein
  • Mycotoxins (aflatoxins, DON, OTA, zearalenone)

Testing is coordinated through laboratories accredited to ISO/IEC 17025 for the required method. See laboratory coordination.

09Food safety and quality risks

  • Mycotoxins in wet harvest years
  • Insect infestation in storage
  • Fumigant residues
  • Sunn pest damage reducing baking quality

10Packaging and labelling

Bulk in vessels and trucks, or 50 kg bags.

11Storage and transportation

Silos and flat stores; we check fumigation records, temperature and insect activity.

12Pre-shipment inspection procedure

  1. Agree specification and sampling method, including GAFTA or contract rules
  2. Verify lot identity, warehouse, bag count or bulk quantity
  3. Draw and seal representative samples
  4. Examine physical quality: foreign matter, broken kernels, insects, odour
  5. Run on-site moisture and test weight where applicable
  6. Send samples for protein, mycotoxins, residues or functional tests
  7. Supervise weighing, loading and hold or container condition
  8. Issue inspection and weight reports

13Relevant international standards

Regulations are amended regularly. Always check the version in force for your destination market.
